Peanut butter cookies are generally something I avoid making… because once I make them, I can’t stop eating them until they’re ALL gone. But a while ago, despite my better judgement, I decided I’d make some… and then realized I didn’t have enough peanut butter! Determined to get my cookies, I decided to use a combination of peanut butter and almond butter – and they were super! Here’s my recipe:
INGREDIENTS
3/4 cup peanut butter
3/4 cup almond butter
1 cup brown sugar
1 stick (1/2 cup) unsalted butter
1/4 cup egg whites
2 cups flour
1 ¼ teaspoons baking powder
DIRECTIONS
Preheat oven to 350F. Combine nut butters, sugar, butter, and egg whites in bowl of an electric mixer, and mix on medium-high speed until light and fluffy.
In a separate bowl, mix together the flour and baking powder. Add the flour mixture to the wet ingredients, and stir with a wooden spoon until just combined.
Scoop out the batter, 1 tablespoon at a time, onto a parchment-lined baking sheet. Flatten with a fork. Bake for ~15 minutes, until lightly golden.
